Don't have time for breakfast? Grab one of these energy bars to have on the run!
- 1c dates
- 1/4 c water
- 1/4 c natural peanut butter
- 1/4 c ground flax seeds
- 1c protein powder
- Dash of salt
- 1/2 c dried apricots
- 1/2 c crushed special K
1. In a food processor blend together dates and water.
2. Add in peanut butter and process until smooth. Add more water if needed.
3. Add in protein powder, flax seeds, salt and process until combined thoroughly. Add in apricots and special K. Pulse.
4. Place a sheet of cooking paper in a dish, pour in mixture and cut into pieces. Place in the fridge or freezer to set.
