No time for Breakie? Prep these every few days and have them ready to go in the fridge!
- 6 Eggs (only 3 whole eggs, the rest egg whites)
- Grate Zucchini and carrot into a bowl.
Finely chop mushrooms, onions and capsicum and add to other ingrediants. add half a cup of corn kernals and mix ingrediants together.
- add in eggs and mix through so that all ingrediants are wet from the mixture. Add alittle water to make the mixture go further.
evenly seperate mixture into slicone muffin trays and bake on 180 for 20-25mins or until egg has set.
Salt and Pepper to taste!
