Strawberry Coconut Overnight Oats
This recipe is perfect for an early morning start or when you are short on time and need breakfast on the go. It’s delish and the flavours can be varied with different fruits, protein powder flavors etc.
- 1 cups rolled oats
- 4-5 fresh or frozen strawberries (pureed)
- 1 cups almond milk
- 2 tablespoons shredded unsweetened coconut
- 1 tablespoon chia seeds
- 1 tsp honey or organic maple syrup
- Option to add a scoop of protein powder (you will need to add a little bit more almond milk if you add protein.)
Mix all dry ingredients in a jar or bowl. Puree the frozen strawberries in a blender and mix through dry ingredients with the honey, almond milk.
Cover with the jar lid or glad wrap and leave in the fridge overnight. If you prefer a more pudding consistency add a dash more of milk before you serve.
