Dark Choc Truffles
Dark Chocolate Peppermint Truffles
1 c cacao powder
(Cacao is the purest form of chocolate you can consume, which means it is raw and much less processed than cocoa powder or chocolate bars)
½ c unsweetened apple sauce (Check the baby food section in your supermarket, or better yet stew your own apples and make your own puree.)
3 tbsp honey (or agave syrup) (Christchurch people – the cheapest place I have found agave syrup is at Piko Whole foods on Stanmore road)
¼ tsp peppermint extract (if you’re not a fan of peppermint you can substitute for another extract or just go for vanilla)
In a medium bowl, stir together all ingredients.
Refrigerate for at least 30 minutes, or overnight. Using a heaped tablespoon of the mixture at a time, roll the chocolate mixture into a ball, and place on baking paper or in individual mini muffin paper liners. Refrigerate until ready to serve. You can lightly dust with more cacao if you like.
serving size – 1 truffle
Store in the fridge for up to a week for those 3pm cravings or just a sneaky treat.
