Quinoa & Tofu Salad

Quinoa & Tofu Salad

A great vegetarian option to keep you going all day!

  • 2 c water
  • 3/4 tsp salt
  • 1 c quinoa, rinsed well
  • 1/4 c lemon juice
  • 3 Tbsp EVOO
  • 2 Tbsp crushed garlic
  • Dash of pepper
  • 250g tofu, diced and precooked
  • 1 small bell pepper
  • 1c grape tomatoes
  • 1c diced cucumber
  • 1/2 c chopped parsely
  • 1/2 c chopped mint
  • Balsamic oil - optional


1. Bring water to a boil and add salt. Add quinoa and return to a boil. Reduce heat and simmer until all the water has been absorbed, approx 15-20 minutes. Spread quinoa on the baking sheet and let cool.

2. Meanwhile whisk lemon juice, oil, garlic and pepper in a large bowl. Add the cooked quinoa, tofu, pepper, tomatoes, cucumber, parsely and mint.

3. Toss well, drizzle with balsamic vinegar.
