Zesty Quinoa Salad

Zesty Quinoa Salad with Roasted Pumpkin and Cashews

1 c quinoa
½ c corn kernels
1 red capsicum
600g pumpkin, chopped into even sized pieces 
1 red onion
6 Tbsp fresh orange juice
2 Tbsp fresh lime juice
1 Tbsp balsamic
2 Tbsp olive oil
2 Tbsp cashew nuts

Preheat oven to 200 degrees

Cook quinoa as per instructions on packet.

Roast pumpkin and onion slices for approx 30 minutes until soft and tender

Combine juices, vinegar and oil to create a dressing. Combine all other ingredients in a large bowl and add dressing. Toss well to combine. Eat warm or chilled. (Serves 2)

Add your favourite protein and you have yourself a delicious lunch or light dinner.
