Homemade Basil Pesto

Santa was kind enough to bring me a food processor for Christmas, so I’m all about the recipes that I can use my new toy with.

Try this delicious homemade basil pesto recipe, Its fool proof – Great for a dip with vege sticks or crackers and the best part is you know exactly what is going into it, unlike most bought dips at the supermarket. You can also use this recipe to alternate with the basil, for example try a kale pesto.

  • 2 packed cups basil leaves
  • 2 large cloves garlic, crushed
  • ¾ cup good-quality olive oil
  • ¼ cup grated parmesan
  • ½ tsp salt
  • ground black pepper
  • ¼ cup toasted pine nuts or walnuts (optional)

Place the basil leaves and pine nuts into the bowl of a food processor and pulse a several times. Add the garlic and Parmesan and pulse several times more. Scrape down the sides of the food processor with a rubber spatula.

While the food processor is running, slowly add the olive oil in a steady small stream. Adding the olive oil slowly, while the processor is running, will help it emulsify and help keep the olive oil from separating. Occasionally stop to scrape down the sides of the food processor.

Store in the fridge for up to 2 weeks or freeze in small containers.
